The same is still true today even though I am now a stay at home mom. By late afternoon, I can count on hunger hitting quickly. Enter the Instant Pot! It’s the perfect kitchen helper on days when I need to get dinner on the table in a hurry and with minimal prep.
I’m always searching for new recipes to try in the Instant Pot, but over the last year I have found a few that are now favorites. These recipes have short ingredient lists, require little prep and cook time, and are delicious!
Spaghetti night happens almost weekly in our house. It’s a meal I know my kids will eat and I can change the type of meat used to provide some variety. This Instant Pot recipe is perfect because all the ingredients cook together in one pot, which makes after dinner clean up super easy.
Chicken Broccoli and Rice Casserole
This meal is perfect when you’re in the mood for comfort good food. The chicken is tender and well seasoned, the rice cooks perfectly, and the cheese melts easily. It’s quick and delicious!
If you love stuffed peppers, but are lacking on time, this recipe is perfect. You get all the flavors of stuffed peppers with little effort. Serve with brown rice and you have yourself a winner! I can’t wait to make this again this fall.

I love sweet potatoes, but hate how long it takes them to cook! I don’t typically have 45 minutes to an hour to roast them in the oven. I’ve tried the microwave trick, but it’s just not the same. I was so happy when I found this recipe because it gives me the outcome of roasting without all of the time. I’ve also used this recipe as a starting point for mashed sweet potatoes.
This recipe is great because it literally takes no time! You set your Instant Pot to zero minutes and the broccoli is ready as soon as the Instant Pot reaches pressure. A quick release and you have perfect steamed broccoli.
